Oatmeal Carrot Zucchini muffins
Ingredients:
- 1 cup all purpose flour
- 1 cup quick oats
- 1/2 cup brown sugar
- I tbsp baking powder
- I tsp cinnamon
- Pinch of salt
- 1 egg
- 1/4 cup olive oil
- I carrot shredded
- 1/2 zucchini shredded
- 2/3 cup milk
- 1 tsp pure vanilla extract
Combine dry ingredients (flour, oats, baking powder,cinnamon, salt) and mix. Combine wet ingredients (milk, olive oil, egg, vanilla) mix well then add shredded carrot & zucchini. Scoop into greased muffin tin and bake for 20 minutes or until a toothpick comes out clean. Makes about 9 muffins.
