Cooking with POM Wonderful & Momtrends

When pomegranates make an appearance, you know it’s time for the holidays! I love POM Wonderful 100% pomegranate juice but have always been a bit afraid of the actual fruit because of the tedious work to free the arils. But, thanks to POM Wonderful, the pomegranate arils come packaged ready to eat & even to cook with!
Momtrends hosted a super fun event, #CookWithPom at Miette Culinary Studio in Little Italy where we celebrated all things pomegranate: drinks, appetizers, entrees & desserts! The chef showcased a variety of ways to incorporate both pomegranate juice and the arils into tasty dishes.
Pom Poms Fresh Arils are available in two sizes: 4.3oz & 8 oz to enjoy as a healthy on-the-go snack, added to a yogurt parfait, to toss in salads, garnish holiday cocktails/mocktails or to add to a savory entree or sweet holiday dessert.
The Pom Refresh mocktails are a refreshing way to start of any party and everyone can have one or two!
Pom Refresh (Mocktail)
Servings: 1
Ingredients:
- 6 oz POM Wonderful 100% pomegranate juice
- 10 large leaves of fresh mint
- 1/8 teaspoon pf Pink Himalayan Salt
- 1 tablespoons Pom Poms Fresh Arils
In a tall glass muddle 10 large leaves of fresh mint and 1/8 tsp of Pink Himalayan Salt. Pour 6 oz of POM Wonderful 100% Pomegranate Juice and 2 oz of water. Stir to dissolve salt. Add ice and garnish with a fresh sprig of mint and Pom Poms Fresh Arils.
We spent part of the night preparing some yummy dishes showcasing some of the may ways you can incorporate pomegranates into your holiday menus!
My 3 favorite dishes of the evening were the Pomegranate Guacamole, Pom Poms with Parmesan Cauliflower and the Whole Wheat Waffles with Pom Poms.
Pomegranate Guacamole (Chef Katie Chin, TV Host Los Angeles, CA)
Servings: 4
Ingredients
- 2 ripe avocados (skin & pit removed)
- zest and juice of 1 lime
- 1 small red onion finely chopped
- 1 large jalapeño pepper, deseeded and finely chopped
- 1 garlic clove minced
- kosher salt to taste
- 1/2 cup Pom Poms Fresh Arils
- tortilla chips or pita chips
In a medium sized mixing bowl, mash the avocado and mix in the zest and juice, red onion, jalapeño and garlic. Season to taste with salt. Stir in the pomegranate arils and serve with tortilla or pita chips.
Pom Poms with Parmesan Cauliflower
Servings: 6
Ingredients:
- 1/2 cup Pom Poms Fresh Arils
- 2 heads cauliflower
- 2 tablespoons olive oil
- 1/2 cup finely grated Parmesan
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/3 cup chopped flat-leaf parsley
Heat oven to 400F. Wash and cut cauliflower into small pieces. I a bowl, toss together the cauliflower, olive oil, Parmesan, salt and pepper. Transfer to a rimmed baking sheet and roast, until cauliflower begins to turn golden, about 35 minutes, turning with a spatula half-way through. Serve on a platter topped with Pom Poms Fresh Arils and parsley.
Whole Wheat Waffles with Pom Poms
Servings: 6
Ingredients:
- 1 1/2 cupa Pom Pom Fresh Arils
- 1 1/3 cup whole wheat flour
- 2 teaspoons baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup milk
- 2 eggs, separated
- 1/4 cup coconut oil
- 1 teaspoon vanilla
- 3 cups vanilla yogurt
- 1/3 cup honey
Heat waffle iron. Whisk together the flour, baking powder, sugar, salt and cinnamon in a bowl. Mix together the milk,egg yolks and oil. In a separate bowl, beat the egg whites to firm peaks. Stir the milk mixture into the dry ingredients then fold in the egg whites. Spoon 2 tablespoons of batter on the waffle iron for each waffle. Cook until golden and crisp. Place on a cooling rack immediately after removing from waffle iron. Top waffles with Pom Poms Fresh Arils, yogurt and drizzle with honey.
