Oatmeal Coconut Blueberry Cookies

We love oatmeal cookies but decided to change it up by adding some coconut flakes & Stonebridge Orchards organic dried blueberries and the outcome was simply delicious!
Ingredients:
- 1 stick softened butter
- 1/2 teaspoon of salt
- 1/2 cup granulated sugar
- 3 cups uncooked oatmeal
- 1 1/2 cup flour
- 2 eggs
- 1 cup sweetened coconut flakes
- 1 bag Stonebridge Orchards organic dried blueberries
- 1 teaspoon baking soda
- 3/4 cup firmly packed brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon vanilla
Method:
Heat oven to 350°F. Beat butter and sugars in a large bowl on medium speed using an electric mixer until creamy. Then add eggs and vanilla; beat well. In a smaller bowl, combine flour, baking soda, cinnamon and salt and add to the large bowl; mix well. Next, add oatmeal, coconuts and Stonebridge Orchards organic dried blueberries; mix well. Drop dough on to ungreased cookie sheets in rounded tablespoonfuls. Bake 8 to 10 minutes or until light golden brown.
Let cool 1 minute on cookie sheets then remove to wire rack to cool completely. Enjoy!
