Once Again Nut Butters

I love peanut butter & was really excited to be a part of the Moms Meet sampling program to try out Once Again Nut Butters! My kit included a variety of nut butters: Creamy Roasted Almond Butter, Creamy No-Stir Peanut Butter, Creamy Cashew Butter & Sunflower Seed Butter plus a booklet of recipes ranging from smoothies, desserts to entrees. I will be experimenting with these nut butters, substituting and adding them to some of my family’s favorite recipes!
- Once Again Sun ower Seed Butter is made by roasting organically grown sun ower seeds. The seeds are milled smooth with sugar and salt, added to create a delicious sun ower seed butter.

- Once Again Peanut Butter uses organic peanuts that are dry roasted and milled. Oil separation occurs naturally. To prevent, stir and refrigerate or freeze.

- Once Again Almond Butter uses only the nest organic almonds available. They are dry roasted and milled with nothing else added to produce delicious organic almond butter.

- Once Again Cashew Butter uses only the nest organically grown cashews to create a super creamy organic cashew butter. 5%-8% expeller-pressed organic sun ower oil is added to enhance the spreadability of this butter.

First, I tried the Once Again Creamy Roasted Almond Butter on a slice of whole grain toast with a side of strawberries. It was a yummy snack (not very sweet) but next time I am going to use it to make an almond butter & jelly sandwich!
Next, I made an Almond Butter protein drink using 1/2 cup Once Again Creamy Roasted Almond Butter, 1 cup Vanilla Coconut milk & 2 tsps monk fruit sweetener. I added everything to the blender, added 2 tsps of hot water and blended until everything was mixed and creamy. This is a great protein filled drink that can be enjoyed cold or warm to start of the morning or as a great snack during the day!

Curried-Cashew Cauliflower
Once Again Organic Cashew Butter
Serves 6
Ingredients:
1 head cauliflower, cut into large florets
1/2 cup Once Again Organic Cashew Butter
2 tbsp olive oil
2 tbsp curry powder
1/4 tsp kosher salt
1/2 cup salted cashews, roughly chopped
- Preheat the broiler. The rack should be in the top portion of the oven so the cauliflower is 3 to 4 inches away from the heat while cooking.
- Whisk together the cashew butter, curry powder, olive oil and salt.
- Toss the cauliflower and chopped cashews in the curry mixture.
- Spread out the cauliflower in a single layer on a cookie sheet.
- Roast the cauliflower under the broiler for 8 to 10 minutes, until just tender when pierced and golden brown. Check halfway through and flip with a spatula if necessary.
- Remove from the oven and serve immediately.
- Enjoy!

Sunflower Trail Mix Cookies
Once Again Organic Sunflower Seed Butter
Yield: 2 dozen
Ingredients:
1 cup Once Again Organic Sunflower Seed Butter
1 cup sweetened coconut flakes
1/2 cup semi-sweet chocolate chips
1/2 cup packed dark brown sugar
1/2 cup dried cranberries
1/2 cup dates, chopped
1/4 cup sunflower seeds
1/4 cup maple syrup
1 large egg
1/2 tsp vanilla
1/2 tsp baking soda
1/4 tsp salt
- Preheat the oven to 350^(0)F.
- Place all of the ingredients together in the bowl of a stand mixer.
- Mix on medium speed until the ingredients are well incorporated.
- Drop generous tablespoons of dough onto a parchment-lined cookie sheet.
- Bake for 12-14 minutes until cookies are set, but still soft.
- Remove from the oven and let cool on the cookie sheet.
- Enjoy!
