I have been trying out the KETO way of life for a couple of weeks and have been experimenting with ways to continue to eat some of my favorite foods. I LOVE tacos and wanted to try another option besides lettuce wraps. I made these cheese taco shells for our weekly taco night and will probably never eat a non-cheese taco shell ever again!

Ingredient:
- shredded cheese (I used a Mexican blend that included cheddar, Colby & Monterey jack)

Cover a baking sheet with parchment paper then create circles using the shredded cheese. Place in oven at 350 on the top rack for about 6 minutes until the cheese has melted and begins creating bubbles.

Move the baking sheet to a lower each for about 3 minutes until you see the the edges getting golden brown.

Take them out and let them cool for about 2 minutes, then pat with a paper towel to absorb some of the excess grease. Set up “racks” for each shell using 2 glasses of the same size and the thick handle of a wooden spoon/spatula. Use a spatula to to pick up 1 cheese disc at a time and carefully drape it on a handle. Place a paper towel under the shell to catch any dripping grease.

Allow the shells to cool fully then stuff with your favorite taco fillings and enjoy!
