Having my mom, the boys grandma over means we get special island treats! I absolutely LOVE my mother’s fried bake (Trinidadian fried dough) that she makes with tons of LOVE. It immediately takes me back to my childhood as soon as I smell it! My mother is from Trinidad; she really enjoys baking and cooking. AND we enjoy eating it all up! I received some Better Body Foods Coconut Flour and Better Body Foods 100% Pure Avocado Oil. She suggested incorporating the new ingredients and making some coconut bake with it…which turned out to be absolutely delicious! Luckily, my 10 year old is obsessed with baking, so he followed her around and gathered the recipe
Ingredients:
- 4 cups of white flour
- 1 cup of Better Body Foods Organic Coconut flour
- 3 tablespoons of baking powder
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 3 oz. of butter or margarine
- 2 cups of tepid water
- 1/2 cup Better Body Foods 100% Avocado Oil
Mix dry ingredients with butter for 2-3 minutes, then start to add water little bits at a time. Knead the dough in the bowl and then transfer the dough into large cutting board and continue kneading. Keep kneading until you feel like the dough is properly mixed. Place dough back into the bowl and cover with cutting board letting no air through. Let the dough sit for 25-30 minutes and knead it again.
Flatten the dough to half an inch thick, start to cut them into pieces. Heat the avocado oil in a frying pan at medium. Start to put your pieces of dough to fry until they are a golden brown color, flip over and fry the other side. Remove from heat, let drain on a paper towel or brown paper. Eat alone, with butter OR with some saltfish (that’s another post)!
