It’s SOUP season which can be a great weekday meal for these cooler months.
The Salton MultiPot MultiCooker (comes with an egg tray and a steamer) is an excellent pot because it requires no open fire and it can be used to boil water and make a number of things like boiled eggs, heat soups and canned goods, cook rice and macaroni. In a Cooking with Meg class, we made a quick and delicious Chicken Soup using some leftover chicken from a rotisserie chicken and a couple other ingredients.
Ingredients:
- Water
- Chicken Broth or Bouillon cubes
- Cubed/Shredded Cooked Chicken
- 1/2 cup of chopped carrots
- 1 stalk of celery(chopped)
- 1/2 diced onion
- Salt and Pepper (optional)
Turn on your Salton MultiPot and add the carrots, celery and onions to the pot. Stir with a wooden spoon for a couple minutes until the vegetables start to soften. Next, add water or chicken broth OR water & a bouillon cube to the pot, filling it about 2/3 full and allow it to come to a boil.
Once, it has come to a boil add the cubed/shredded cooked chicken and salt/pepper to taste. Allow it to come to a boil again then turn off the MultiPot and enjoy eating your soup once it has cooled down a little.
This is a great recipe to add additional ingredients and make it your own! You can add cooked noodles, corn, peas, cooked rice or even different spices!
